Cilantro Lime Rice
1 cup Basmati Rice
1 1/2 cups Water
1/4 cup lime juice
1/2 bunch finely chopped cilantro
1 tbsp coconut oil
salt to taste (approx 1 tsp)
This is a very basic but delicious rice recipe.
Heat coconut oil in saucepan and add the Basmatti rice to cook for 1-2 minutes. Add the water and salt and bring to a boil. Lower the heat, cover with lid, and let simmer for about 12 minutes. Do open cover, stir rice, or disturb it in any other way. Turn off heat, uncover and let cool for a few minutes. After rice has cooled down a bit (approx 5-10 minutes), fluff rice with a fork and add lime juice and chopped cilantro. Mix to combine and enjoy.
sometimes I throw the lime juice and cilantro into a blender, then mix into the rice. Same flavor, more green color!
