Cilantro Lime Vinaigrette


1 cilantro stalk (about 10 sprigs)
2 limes (lemons can be used)
1/2 cup rice wine vinegar
1/2 cup olive oil
1-2 cloves garlic
1″ stalk of ginger
1-2 tbsp dijon mustard
salt & pepper to taste


Start by chopping the ginger and garlic. Add to a blender with the vinegar and juice of the limes or lemons. Process until smooth. Chop the cilantro and add it to the blender and blend again until smooth.

Add the mustard, turn on the blender, and drizzle in the olive oil to emulsify the dressing. Once smooth, season with salt and pepper to taste

This can also be used as a maninade for chicken. If you use it as a marinade, increase the amount of garlic, ginger, and cilantro to intensify the flavors.
