Coconut Curry Cod
Ingredients
- 2-3 lbs cod
- 1/2 sweet yellow onion
- 4-5 cloves garlic, diced
- 1 tbsp fresh ginger, julienned
- 1 tbsp coconut oil
- 1/2 tsp cumin seed (or ground if you don’t have)
- 1/2 tsp fennel seed (or ground if you don’t have)
- 1/2 tsp garam masala
- 2 tbsp shredded coconut
- 1 spicy chili pepper (optional – habanero)
- 1 tsp dried cilantro (if you have)
- 1/2 bunch fresh cilantro
- 1 bunch spinach leaves
- 1 can coconut cream
- salt & pepper
Instructions
- In a pan, start by toasting your spices (cumin, fennel, garam masala, dried cilantro) and shredded coconut lightly and set aside
- Add some coconut oil to a pan and cook the onion, and half the garlic and ginger
- Add the toasted spices to the pan
- Add coconut cream and bring to a simmer
- Add cod pieces, whole or chopped into smaller 2″-3″ pieces
- Let simmer for 3-4 minutes
- Add the rest of the chopped ginger and garlic
- Add salt and pepper
- If you like it spicy, add a chopped chili pepper
- Add spinach, cover and cook for a few minutes
- Remove from heat and serve with cilantro lime rice
