Moussaka

What makes moussaka so special?  For me, it’s the perfect balance of meat and and the most delicious béchamel.  Some add potato, but i like it with just eggplant.  This recipe is broken down into three parts… the Béchamel, the ground meat, and the Moussaka assembly.

INGREDIENTS

  • Béchamel
    • 1/2 cup butter (you can do 1/2 butter 1/2 olive oil if you wish)
    • 1/2 cup flour
    • 5 cups whole milk
    • 2 egg yolks
    • salt & pepper
    • nutmeg
  • Meat
    • 1 lb ground beef (or turkey)
    • 1 onion
    • 2 cloves garlic – diced
    • 1 can tomato sauce
    • 1 tbsp tomato paste
    • 1 cup red wine
    • cinnamon stick
    • 1 bay leaf
    • salt & pepper to taste
  • 4-5 large eggplant
  • Bread crumbs
  • Olive Oil
  • Grated parmesan or kefalotiri (optional to top with cheese)
