Sweet Burbon Ham

Ingredients:

1 city style, bone-in ham
¼ cup brown mustard
2 cups dark brown sugar
1 oz bourbon
2 cups crushed ginger snap cookies

Instructions:

Preheat the oven to 250°.

Place ham in a roasting pan. Using a small paring knife, score the ham from top to bottom, spiraling down around the ham. Then, start at the opposite angle and score across, forming diamond cuts.

Tent the ham, insert a thermometer, and cook for 3-4 hours until internal temperature reaches 130°.

Remove from oven, take out thermometer, and pull off skin and any fat that comes off

Heat oven to 350°.

Dab ham dry with paper towels, then brush on a liberal coat of mustard. Sprinkle on brown sugar and pack loosely as you coat the ham. Sprits this layer lightly with bourbon, then loosely pack on as much of the crushed cookies as you can.

Insert the thermometer into a new hole and return ham to oven uncovered. Cook until internal temperature reaches 140°, about another hour.
Remove from oven and let rest for ½ hour before carving.
