Calamari Tacos

Ingredients:

1 lb calamari steak
1 tsp lemon juice
2 tsp olive oil
1 tsp Italian parsley
1 tbsp chopped garlic
1 tbsp shallots
1 inch minced ginger
1 tsp red pepper flakes (optional)

Instructions:

Wash calamari steaks.  Score them slightly in one direction and then slice them thin (1/4″ to 1/2″)

In a bowl, combine all ingredients and let the calamari marinate at least 6 hours

In a searing hot pan toss in a handful of calamari strips.  Let it sear and cook for 3-4 minutes, mixing every minute or so.

Remove and build your tacos

Serving:

Fresh corn tortillas, Kale slaw, Cotija Cheese, hot sauce

Fresh corn tortillas:

Masa flour (corn flour), water, salt, cumin.  Mix into a thick paste, roll into a ball, put between parchment paper or plastic wrap, flatten with the back of a pan, cook in a pan over medium heat.

Kale Slaw:

Chopped kale, cabbage, and radish.
