Canellini and Edamame Bean Salad


1 can canellini beans
1 bag edamame beans
1 cup chopped arrugula
1 cup chopped green onion
1-2 chopped zuccini
1/4 cup parmesean cheese
1/4 cup olive oil
2 garlic cloves
zest of 1 lemon
1-2 sliced tomatoes
splash of vinegar
salt and pepper to taste


If you cannot find edamame beans by themselves, just buy edamame in the pods and remove them into a bowl.

The only thing you heat up is the olive oil and garlic. In a saucepan, add the olive oil and grate or thinly slice the garlic. Heat to cook for a few minutes.

Remove from heat and add to a bowl with the remainder of ingredients. Mix well and serve.
