Chickpea Salad with Fresh Herbs
2 cans chickpeas
1/2 cup chopped fresh basil
1/2 cup chopped fresh parsley
1/2 cup chopped fresh oregano
1/2 cup grated Parmesan or Asiago Cheese
1/2 thinly sliced red onion
1 grated/pressed garlic clove
1 diced red pepper
1 diced medium tomato or a handful of small tomatoes
zest and juice of one lemon
olive oil
salt & pepper
Instructions:
Rinse and drain chickpeas and add to a bowl. Chop the herbs and vegetables and add all ingredients to the bowl. There will be a lot more herbs in the salad than you think there should be. Dress the salad with the olive oil, salt, pepper, and lemon juice and toss to incorporate.
