Moussaka
What makes moussaka so special? For me, it’s the perfect balance of meat and and the most delicious béchamel. Some add potato, but i like it with just eggplant. This recipe is broken down into three parts… the Béchamel, the ground meat, and the Moussaka assembly.
INGREDIENTS
- Béchamel
- 1/2 cup butter (you can do 1/2 butter 1/2 olive oil if you wish)
- 1/2 cup flour
- 5 cups whole milk
- 2 egg yolks
- salt & pepper
- nutmeg
- Meat
- 1 lb ground beef (or turkey)
- 1 onion
- 2 cloves garlic – diced
- 1 can tomato sauce
- 1 tbsp tomato paste
- 1 cup red wine
- cinnamon stick
- 1 bay leaf
- salt & pepper to taste
- 4-5 large eggplant
- Bread crumbs
- Olive Oil
- Grated parmesan or kefalotiri (optional to top with cheese)
