Raita / Indian Yogurt Dip

Ingredients:

2 cups plain yogurt
1 large cucumber
3 tbsp minced mint leaves
½ tsp salt
½ tsp ground cumin
¼ tsp paprika
pinch sugar
pinch cayenne

Instructions:

Peel the cucumber and remove seeds. Finely chop. Place yogurt in a fine mesh strainer set over bowl and drain for 1 hour. Discard liquid.

Place drained yogurt in bowl and add all ingredients. Cool in refrigerator. Remove, stir, and serve.
