Salt Dome Fish

Ingredients:

1 whole sea bass / red snapper / salmon / grouper / rock fish
fennel
parsley
dill
orange slices
lemon slices
2 boxes kosher salt
4 egg whites
½ cup water

Instructions:

Open fish and stuff with fennel, parsley, dill, orange slices, lemon slices, and any spices you want. Mix salt and egg whites with water. Place a layer of salt mixture on bottom of baking pan and lay fish on top. Cover fish with salt, ensuring that the fish is completely covered.

Bake in a 450 degree oven for 40 mins or until internal temperature of fish reaches 136 degrees.
