Vegetable Brown Rice


1 cup brown rice
1 celery stalk – minced
1/2 onion – minced
1 green onion – minced
1 portabella mushroom – minced
1-2 garlic cloves – minced
1/2 cup soy sauce
1/2 cup balsamic vinegar
1 tsp sesame oil


Start by bringing 2 cups of water or broth, soy sauce, vinegar, sesame oil, and salt/pepper to a boil. Dump in your brown rice, lower the heat to a simmer, cover, and let cook for about 50 minutes or until rice has absorbed all the liquids and is cooked. You may need to add more water or broth during the cooking process.

While rice is cooking, in a separate saucepan, add the sesame oil and all your vegetables. Cook until all vegetables have cooked down. Add some balsamic vinegar and salt/pepper to season the veggies. Once they has cooked down, set aside.

When the rice is done cooking, dump the rice into the vegetables and encorporate. If your have a rich, sweet balsamic vinegar, you may want to sprinkle some on top to season.

Plate and serve


This is a great healthy meal in itself, or served alongside vegetables or chicken
