Avgolemono Soup/ Chicken Lemon Soup


4 Cups Chicken Broth
1-2 Cups Shredded Chicken
2 Whole Eggs (Beaten)
1 Whole Lemon (Squeezed)
3/4 Cup Orzo (Dried)
2 stalks diced celery (optional)
1 Handful Parsley (Fresh, chopped, optional)
1 Pinch Pepper (To taste)
1 Pinch Salt (To taste)


Bring the broth to a boil and add the orzo and celery.

Cook until the orzo is tender.

Take the soup off of the heat.

Add the lemon juice to the eggs and beat well.

Take a ladel full of the broth and slowly add it to the egg/lemon mixture while beating well, taking care not to curdle the eggs.

Slowly stir the egg/lemon mix into the soup.

Add your chopped chicken, chopped parsley and a little salt and pepper.


It’s BEST to make your own chicken broth and add the chicken in the soup! You can also make it with vegetable broth
