Gigantes – Giant Beans
2 pounds of dry giant beans
2 carrots
1 large onion
2 tomatoes
2 cans tomato sauce
1/2 cup sun dried tomatoes (optional)
salt & pepper
olive oil
Instructions:
Cooking time depends on the quality of the beans. Some beans take an hour to boil, others take 2-3 hours.
Set your oven to 350.
In a large pot, boil water and add your dry beans
Cook for an hour over medium hear or until the beans are tender
Strain the beans and reserve some of the liquid
Add the beans to a glass baking dish
Cut your carrot into 1/2 circles and add to the baking dish
Add the two cans of tomato sauce, salt, pepper, and a splash of olive oil. Mix to combine. Spread the mixture evenly
Slice your onion into strips and saute in a pan until wilted
Add the onions to the dish and spread into a thin layer. Slice your tomatoes into 1/2 thin circles and add a later on top of that. Sprinkle your sun dried tomatoes at this point as well.
Add enough of the reserved bean liquid to the dish to cover the beans and veggies.
Cover with aluminum foil and bake for about an hour or until the beans are cooked through.
