Shrimp Saganaki
1 lb cleaned/de-veined shrimp
1 can tomato sauce
2 chopped tomatoes
2 diced garlic cloves
1 thinly sliced onion
1/4 cup ouzo / liqueur
1/4 cup water
1/4 cup feta cheese
1 small bunch fresh parsley
olive oil
fresh & dry oregano
fresh chopped basil
dash of red pepper flakes
salt & pepper
Instructions:
Pre-heat oven to 400
In a pan, saute the onions in olive oil until they are wilted
Add the garlic and red pepper flakes and cook for 2-3 minutes
Add the tomato sauce, tomatoes, basil, oregano, salt and pepper
Add the ouzo and water, being careful not to ignite
Let the sauce cook for 20-30 minutes.
Add the parsley and take off the heat and place the mixture in a baking dish.
Lay the shrimp in a single layer on/in the mixture, simply press them down.
Sprinkle the feta cheese on top.
If you are serving right away, pop it into the over for 8-10 minutes. If you want to serve in a few hours, set aside and pop into the oven for around 10 minutes, or until the sauce is bubbling.
You may want to put it on the top rack for a quick 2-3 minute broil to darken/melt the cheese at the end
Note:
You can make most of this ahead of time. Simple make everything up until the shrimp. When you are ready to serve, place the shrimp in the filling and pop into the oven for 10-12 minutes
Also, you can make one large dish, or smaller individual ramekins.
