1.5 cups Red LentilYou can also use yellow lentils

1 OnionDiced

2 Green onion

2-3 CarrotDiced

2 tsp curry powder

1 tsp TurmericOptional, adds color

1 tsp CardamomOptional, but adds depth

8 cups Vegetable broth

2 tsp Salt

1 tsp Pepper

1/2 cup Olive Oil
Directions
This Indian-inspired dish is quick, easy, spicy and delicious! Cool your mouth down by topping the lentils with a cool dallop of Raita.

Add olive oil to a pot and turn heat to medium |

Add all of your spices and toast them for a minute. Add as much or as little cayenne pepper you’d like to make spicy. Add onions and carrots and sauté for a few minutes |

Add broth and once it comes to a simmer, add the lentils |

Cover and let cook for 15-20 minutes or until lentils have softened but not mushy. Add a bit more water if necessary. |

Once cooked, serve in a bowl and top with green onion and Raita. I also add pickled chilies for an added punch! |
